Preheat oven to 375 degrees.
When the pork roast goes into the oven, turn the temperature down to 350 degrees.
3 or 3.5 lb pork loin roast.
1 tsp Kosher salt (table salt will work)
1 Tbsp Montreal Steak Spice
1/4 tsp garlic powder (optional)
2 eggs, well beaten
1 sleeve saltine crackers, crushed
Rinse the pork loin and pat dry. Place crushed saltines in a shallow dish or on a plate. Sprinkle outside of roast with salt, then with Montreal Steak spice and garlic powder. Brush eggs over entire roast, then roll in crushed saltines. Make sure the entire roast is coated. Lower the oven temperature to 350 degrees. Cook roast for 1.5 or 2 hours, until the outside is crispy and the pork is cooked. A smaller roast can be used, but modify the spices and cooking time accordingly.
