Strawberries in Ginger-Lime Syrup.
Approx. 2 cups strawberries
zest of one lime
juice of one lime
juice of one lime
2 tablespoons of honey
1/2 tsp, packed, freshly grated ginger
Whipped cream, for serving
Wash and hull the strawberries. If you are using reallly big berries, halve them or slice them (really though, the small ones are the best). Put the strawberries into a bowl.
In a small microwaveable dish, like a glass measuring cup, mix together the honey, lime juice, lime zest and the ginger. Heat on high for about 30 seconds, stirring a couple of times, just until the honey has melted and the mixture is hot. Pour over the strawberries, stir gently and refridgerate until cold (at least an hour).
Scoop into dessert dishes and garnish with whipped cream and candied ginger. No serving size – probably would feed three or four people but I nearly ate the whole thing. Enjoy!

Well .. I think the ginger is growing on me. 🙂 Haven’t eaten too much of it, that I know of – we were more into pork fat and maple syrup growing up.
