Iced Coffee Cocktail.
For one serving:
4 ice cubes, crushed
4 tablespoons of heavy cream (35% whipping cream)
3/4 cup cold, strong brewed coffee (OR 1 1/2 tsp. instant coffee and 3/4 cup of water)
1 tsp vanilla extract
1 tablespoon powdered sugar
1 oz Kahlua or Bailey’s Irish Cream
Whipped Cream or vanilla ice cream for garnish
Spin the ice cubes in the blender a couple of times to break them up. Add the remaining ingredients and blend until smooth. Garnish with whipped cream or a scoop of vanilla ice cream.
Yum. I really do love Bailey’s. I always get some for Christmas. Now maybe I will have to have Christmas in July and get another bottle.
