French Toast with Cinnamon.
20 minutes total time
serves 3 to 4
3 large eggs
1/2 tsp. vanilla, OR 1 tsp. artifical vanilla extract
1/2 cup milk
cinnamon
5 or 6 slices not so fresh bread
Beat the eggs with the milk and vanilla.
Heat a griddle or frying pan over medium heat – either spray with cooking spray or melt butter in the pan. Sprinkle each slice of bread with cinnamon on both sides.
Dip bread into the egg mixture and allow it to soak for a few seconds on each side. Fry over medium heat until browned on both sides.
really, cinnamon before the egg? Who knew ! I thought it would all wash off in the eggy stuff and float around. I will have to try. French toast is a staple around here. Caleb must ask for it 2-3 times a week. For the record… bantee eggs work great ! Anyone want some bantee chickens ? LOL
Really – the cinnamon doesn’t wash off at all. It sort of falls into the ‘pores’ of the bread – if anything, it may make the egg not stick to the bread.
Us older French Canadians dont call this French Toast, we call it Golden Toast, “Toast D’Or”
I’ve tried cinnamon in the egg mixture but it doesn’t mix in – good idea. Also, to make the mixture thicker, I add flour (+/- baking powder) – similar to a thin pancake batter and dip the bread. Makes a thicker slice and doesn’t get soggy.

Adding flour to the mix is a great idea. I saw a recipe for that the other day, but didn’t try it because I wondered how it would turn out. I’m going to try it next time I make French Toast. Thanks for the tip!
Haven’t found any good wheat free bread recipes yet (they seem girtty or just, something’s wrong), have been looking because my mother is gluten intolerant.Will keep looking, for both of you, and hope that anyone reading this may be able to help.
