Leftover Tuesdays #3 – The Roundup.
Our first entry is from Brilynn, at Jumbo Empanadas – she made Leftover Danish Sandwich Cookies from leftover egg whites and pastry cream. Not only is the cookie gorgeous, but it has one of my favourites in it – pastry cream. Yum!
Foodie Pam from Project Foodie made a beautiful Leftover Basil-Parsley-Pesto Pizza. Not only did she use some leftover herbs, she also used some odds and ends from her fridge as well.
Lydia at My Kitchen, from Sydney, Australia, cooked up some Onigri using leftover steamed rice from her lunch. A creative use of rice and a different dish for me to try – Mr. Chef is already planning to try it.
Tigerfish at Teczcape, from sunny California (is that a cliche?) sent us her entry Coffee Haupia, which used up some leftover coconut milk and made a lovely dessert. Now, Tigerfish doesn’t like the before picture with the entry, but I think it’s a beautiful picture regardless, to go with a great dessert.
Susan Campbell, from Milan, Italy and the Porcini Chronicles made Frittata degli Spaghetti using leftover angel hair pasta al pomodoro. Susan describes her dish as a leftover spaghetti omelet.
Mia at Cloudberry Quark, from Finland, submitted Carroty Karelian Pasties, which used some planned leftover carrot purree from a carrot casserole. The photo is stunning for this breakfast dish that I have never heard of before.
Fruittart from Illinois, over at Fruittart, sent in TWO entries! Good for you – and I think they both deserve their own write up.
Entry number 1 from Fruittart is Leftover Fruit Salad Trifle. Leftover cake disaster was layered with fresh strawberries and leftover fruit salad to make this lovely, light dessert.
Entry number 2 from Fruittart is Chicken Curry, using leftover cooked rice. This is a very easy curry recipe that looks and sounds delicious. Fruittart also used her own handy convenience frozen chicken, a great suggestion for busy cooks.
Katrina from Daily Unadventures in Cooking submitted a wonderful soup using leftover roasted vegetables from a roast chicken dinner. Katrina seems to think that this isn’t creative enough for Leftover Tuesdays, but it looks great – and the addition of feta cheese to the soup is fantastic.
Ulrike from Kronshage (a small village in Norther Germany) has entered her instructions for Mushrooms and Polenta, using leftover polenta and button mushrooms. Ulrike’s site is called Kuchenlatein. I can certainly relate to having boys with different tastes!
David from Cooking Chat, and the founder of Leftover Tuesdays, submitted a recipe for Penne with Prosciutto, Asparagus and Goat Cheese. David is from Massachusetts, U.S.A., and created this very spring-like dish in an effort to use up some leftover prosciutto and goat cheese.
Mary is from Kingston, N.Y., and her blog is at Ceres and Bacchus. Mary brings us Sincronizadas for two people, once with leftover sirloin steak and monterey jack cheese, and the other with leftover chicken. Are quesadillas passe? Only if you’re making Sincronizadas instead!
And finally my entry, Leftover Oatmeal Cake. The best way to eat oatmeal, in my opinion, is add chocolate and dress it up like a cake.
